This experiment was carried out to evaluate the carcass characteristics, chemical composition and fatty acid profile of the longissimus muscle of 32 young bulls from four genetic groups: Caracu; Canchin; Aberdeen Angus × Canchin; and Charolais × Caracu, finished in feedlot and slaughtered at 22 months old. Each group was composed of eight animals. There was no difference for moisture, ash, crude protein or total cholesterol between bulls from different genetic groups. However, total lipids percentage was higher for bulls from Caracu and Aberdeen Angus × Canchin and lower for Canchin and Charolais genetic groups. Comparative performance of lab tests and blood testing device to monitor glucose, total cholesterol and triacylglycerol in type 2 diabetic patients BJPS

The performance of lab tests (LT) and blood testing devices (BTD) to monitor glycemia vs. glycated hemoglobin A1c (A1c) were compared. In addition, the performance of blood glucose, total cholesterol (TC) and triacylglycerol measured by LT and BDT were compared. All parameters were measured based on the same blood samples from overnight fasted type 2 diabetic patients (T2DP). Linear regression analysis was used for all comparisons. The results showed that A1c correlated better with LT-glucose (r = 0.58) than BTD-glucose (r = 0.42). Moreover, LT vs. BTD showed r values of 0.90, 0.82 and 0.92 for glucose, TC and triacylglycerol, respectively. It was concluded that the performance of LT-glucose was better than BDT-glucose. Lipid and glucose metabolism of 76 ten-day-old Cobb male broilers, experimentally infected with Eimeria acervulina, was studied for 30 days. Birds were distributed in 2 groups: one infected with 1x10(6) E. acervulina sporulated oocysts, and the other inoculated with distilled water. Pathological e biochemical liver changes were assessed, as well as plasma glucose concentrations and total cholesterol, HDL, LDL, VLDL, fatty-acid, and triglyceride levels in the serum. The infected broilers presented hypoglycemia associated with a reduction in liver glycogen. In addition, these birds developed fatty liver, and there were changes in all lipid classes in the serum. Carcass characteristics and chemical composition of Longissimus muscle of 32 young bulls from four genetic groups slaughtered at 14 months old were evaluated. Experimental design was completely randomized and distributed into four genetics groups: 1. Caracu (CAR); 2. Canchin (CAN); 3. Charolais vs. Caracu (CHC) and 4. Aberdeen Angus vs. Canchin (AAC). Carcass dressing and carcass conformation were lower for CAR than CAN, CHC and AAC genetic groups. No difference has been reported with regard to moisture, ash, crude protein, total lipids and total cholesterol among four genetics groups. 野生エゾシカ肉の栄養特性について OAK

有害獣として駆除された野生エゾシカの多くは廃棄されているのが現状である。本研究では,シカ肉資源の有効活用に資する基礎的知見を集積する目的で野生エゾシカ背最長筋の栄養特性とその季節的変動を 分析した。野生エゾシカ肉の水分は68.9-77.3%,タンパク質は21.0-26.6%,脂質は0.3-6.1%,灰分は 1.1-1.4%であった。脂質含量は5月から8月にかけて増加して11月に減少していた。一方,水分量は逆の 傾向を示した。無機成分としては, 100g当たりカリウムは86.8-110.8mg,鉄は4.5-7.7mg,亜鉛は 3.0-3.8 mg,銅は0.7-1.0mgであった。また,鉛は0.7mg,カドミウムは検出されなかった。全脂質の 主要な脂肪酸は,パルミチン酸,ステアリン酸,オレイン酸およびリノール酸であった。その中でも, 5月 ではリノール酸が多く, 8月と11月ではパルミチン酸の割合が高かった。また, リノール酸,アラキドン 酸およびドコサベンタエン酸の割合は11月にかげて減少し,これに対してパルミチン酸,パルミトレイン 酸およびオレイン酸は増加した。総コレステロールは10.5-167.8mg/100 gであった。 Many Cerus nippon yesonsis (yezo sika) deer are now being exterminated as harmful animals in Hokkaido,]apan,but the meat is mostly discarded.
